In June 2026, Anderlecht landed on the world map of coffee. A roaster from the neighbourhood won a World Coffee Roasting Championship — a first for Belgium. The news travelled through every paper. And a few streets away, in the same district, an open-air coffee roastery in Anderlecht does the exact opposite: it doesn't chase the perfect recipe, it lets today's recipe happen.

Championship roasting is a jeweller's craft. Air controlled to the degree, sealed drum, a curve tracked second by second, the same coffee reproduced a thousand times identically. That's the beauty of precision. Every medal is earned.

We chose the other road. Golden, our roaster, breathes in the open air, at the market. No walls to block the north wind. No thermostat against the damp rising off the concrete after rain. Every Saturday, the air enters the batch like a second craftsman — one we can neither hire nor fire.

That's why no bag of ours is like last week's. The sky writes the recipe. We just hold the fire.

Same bean, same farm, but roasted on a 6°C windy morning or on a heavy, humid one — and you get two different coffees, signed by two different days.
