The smell of freshly roasted coffee, carried by the wind

There is no better signboard than the smell of freshly roasted coffee carried off by the wind. On Saturday morning, when Golden lights up at Marché de l'Abattoir, exit of the Manufakture car park in Anderlecht, nobody reads a poster. People lift their noses. The aroma reaches them before they see us — and it brings them in. The smoke, caught between flame and wind, writes an invitation no printer can copy.

The smell of freshly roasted coffee can't be faked

In 2026 everyone is chasing sensors, automation, roasting dictated by a screen. And that is exactly why people are asking again for the story behind the roast. We hand you the one you can smell.

A bean coming out of Golden right now releases hundreds of aromatic compounds at once — warm bread, caramel, a smoky sweetness that rises with the smoke. A bag that has sat three months on a shelf has nothing left to release. That is why this smell is the most honest freshness test in the world: if you catch it drifting in the air, the coffee is alive. If you don't, it's just brown. The nose knows before the tongue.

How the wind carries the smell of freshly roasted coffee over the stalls

This weekend's sky is dry, with a breeze. Saturday, a west wind, clear air, around 25°C. Sunday it stiffens from the northwest, climbs toward 27°C, still dry. For taste, that's a story. For smell, it's a map.

The wind takes the aroma off Golden and carries it between the stalls, past the two bronze oxen, all the way to the cars in the Manufakture car park. A dry, breezy weekend sends the smell far — it's the invisible trail that brings the tribe back to us. The sky doesn't only write the recipe in the cup; these days, it also writes how far the roasting can be smelled. Why the smell of freshly roasted coffee can't be bottled

Fresh aroma is fleeting, and that is its whole beauty. A just-roasted bean degasses — it lets go of CO₂ and the most volatile aromatics over the first days. That's why you smell it strongest beside the roaster, in the market, and why it fades with every day in the bag.

Indoor workshops vent their smoke through a chimney, somewhere above the roofs of the industrial district. Their smell scatters into the air, reaches no one. With us, the open air is the diffuser. The aroma isn't collected in a vial — it is lived, once, there. See which lots are alive right now in our coffee catalogue: nothing that happens between flame and wind ever repeats.
