The whole industry sells you a subscription. A box at the door, every month, the same taste, forever. It sounds convenient. We can't do it, and it isn't laziness. A fresh roasted coffee subscription with an identical taste, month after month, would be a lie. At Meteo Koffie the sky writes the recipe, and the sky never signs twice the same way.

What a fresh roasted coffee subscription promises in 2026

This year the subscription became the commercial engine of roasteries. Steady monthly income, customers who return on their own, a predictable box at the door. Some go further: they read your palate with an algorithm and send you the exact same profile, so you won't drift away.

The logic holds in a closed workshop. Fixed temperature, fixed humidity, the fan always pulling the same air. The roast curve repeats down to the comma. Then you can promise the March bag is the twin of the November one.

Why you won't find a fresh roasted coffee subscription with us

Golden roasts between flame and wind, not in an air-conditioned box. On Saturday a north wind steals the heat and the bean comes out denser, with body. On Sunday the air clears, settles, and the same sack yields a lighter, more floral lot. The same green coffee, two signatures.

The coming weekend brings the edge of autumn. Cool mornings, air pulling tight. The bean roasted a step deeper, with caramel and dried fruit rising on their own, not poured from a recipe.

A subscription would ask us to promise next Saturday's lot will match today's. We can't. We won't. Every bag carries its roast date and the weather of the day. A small lot that vanishes once it's gone, and doesn't come back.

Golden roasts only on Saturday and Sunday

There is no button to click on Monday that makes a box flow. The fire lights on Saturday and Sunday, at the exit of the Manufakture car park, in Anderlecht. The rest of the week the sky shifts, and we wait to see what it writes for the weekend. You don't subscribe to that. You live it.

What we give you instead of a fresh roasted coffee subscription

We don't leave you empty-handed. We give you two things a fixed subscription never can.

First, the ritual. You come to the market on Saturday or Sunday, you smell the smoke before you see us, you pick the day's lot with your nose. No courier brings that.
